1-In a small pot, heat the water and cook the tomatoes with the chile de arbol, onion and garlic.
2-Blend the previous preparation with a little liquid.
3-Heat a small pot over medium heat with the oil and sauté the previous preparation, add the bay leaf, oregano, cloves, cumin, season with salt to your liking and cook for 5 more minutes so that it thickens slightly. Reserve the sauce.
4-On a small board, cut the birotes, remove a little crumb and fill with the carnitas.
5-Serve the cake on a plate and cover with the sauce. Add some red onions and red sauce to accompany. Enjoy.
