When it boils, add the flour. We remove the saucepan from the heat and stir until the ingredients are integrated. Then we put the saucepan back on low heat and stir until the dough is a ball. We remove from the heat and reserve.

When the dough is warm, add one egg, integrate it, and then add the other and integrate it again. Next, we fill a wide-mouth pastry bag with the dough and form the eclairs, which we will place on a baking tray lined with baking paper.
We preheat the oven to 180ยบ C. and when it is hot we put the tray in and let the eclairs cook for a quarter of an hour.
While the eclairs are making, we prepare the custard. We reserve a glass of milk and heat the rest together with the cinnamon and lemon peel. When it boils, remove it from the heat and let it rest for ten minutes.
Next we mix the yolks with the normal and vanilla sugar, the milk that we had reserved in the glass and the cornstarch, and we beat very well until there are no lumps. Then we add the milk flavored with cinnamon and lemon, mix and bring everything to medium heat, stirring constantly. We reserve.
When the eclairs are made and the custard has cooled, fill the eclairs with the custard and use a filling syringe.
Finally, we melt the chocolate by heating it in the microwave and pour it over the eclairs. Before the chocolate hardens, we can decorate the eclaris with some colored candies. Delicious!
