Place the steak in the freezer for about 45 minutes. Once firm, cut into thin 1/8″ strips; In fact, the finer the better. Cover with 1 tablespoon of oil and set aside.
Cook fries according to package directions; stay warm.
CHEESE SAUCE
Melt butter in a medium saucepan.
Once the bubbling has subsided, add the flour and cook for 1-2 minutes until lightly browned.
Slowly add the warm milk to the butter and flour mixture, stirring constantly. Cook for 4 to 5 minutes until thickened.
Remove from heat and slowly stir in cubed cheese until melted.
Cover and cook over as low a heat as possible until completely incorporated, stirring periodically. Stay warm.
MEAT, PEPPER AND ONION MIXTURE
Preheat a large skillet over high heat.
Add the meat to the pan and cook over high heat, until no longer red.
Remove from the pan and set aside.
