  • 1. Preheat your oven to 375°F (190°C). In a large mixing bowl, combine ricotta, mozzarella, and Parmesan cheeses, stirring until well mixed.
  • 2. Add chopped ham, crumbled sausage, and pepperoni to the cheese mixture.
  • 3. Fold the lightly beaten eggs into the meat and cheese mixture along with the chopped parsley, salt, and pepper, making sure everything is distributed evenly.
  • 4. Place one pie crust into the bottom of a 9-inch pie dish. Spoon the filling into the crust, spreading it out evenly.
  • 5. Cover the filling with the second pie crust, and crimp the edges to seal the two crusts together.
  • 6. Brush the top crust with the prepared egg wash, ensuring a golden, glossy crust upon baking.
  • 7. Make several slits in the top crust to allow steam to escape during baking.
  • 8. Bake in the preheated oven for about 45 minutes to 1 hour or until the crust is golden brown and the filling is set.
  • 9. Let the pie cool for at least 15 minutes before slicing. This allows the filling to set and makes serving easier.

Variations & Tips

  • – Vegetarians can enjoy a variation of this pie by substituting the meats with grilled vegetables and adding different kinds of cheeses, such as smoked provolone or asiago.
  • – Playing with spices can bring a new dimension to the pie; consider incorporating a pinch of nutmeg or oregano into the filling.
  • – If you have the time and inclination, making your own pie crust will add an extra homemade touch to this dish.
  • – It’s vital to allow the pie to cool before cutting into it, as the flavors need time to meld, and the structure becomes more stable for slicing.
  • – And, as always, using high-quality, full-fat cheeses will enhance the overall decadence and taste of your Easter celebration centerpiece.

Enjoy!!
