In a mixing bowl, combine the granulated sugar, flour, divided evaporated milk (set aside 2 tablespoons for the glaze), lightly beaten egg, and pure vanilla extract.
Gently fold in the mashed sweet potatoes until the mixture is well incorporated.
Pour the sweet potato mixture into the uncooked pie crust, spreading it evenly.
To prepare the glaze, whisk together the granulated sugar, flour, melted butter, and the reserved 2 tablespoons of evaporated milk. Drizzle the glaze over the sweet potato mixture, ensuring complete coverage. If desired, you can add pecan halves for garnish.
Bake the pie in the preheated oven for approximately one hour, or until the pie crust turns a beautiful golden color, and a knife inserted near the center comes out clean.
