Ingredients:

1 whole chicken (around 4-5 pounds)

1/2 cup butter, melted

1 lemon, sliced

A handful of fresh rosemary sprigs

4-6 plum tomatoes, halved

Salt and pepper, to taste

Optional seasonings: 1/2 teaspoon paprika, 1/4 teaspoon garlic powder

Instructions:

Prepare the chicken by removing any giblets and rinsing it under cold water. Pat dry with paper towels.

Season the chicken inside and out with salt and pepper, ensuring the cavity is also seasoned.

In the slow cooker, create a bed with a layer of lemon slices, rosemary sprigs, and tomato halves.

Place the seasoned chicken on top of this fragrant bed.

Drizzle the melted butter over the chicken and add any additional seasonings if desired.

Surround the chicken with the remaining lemon slices, rosemary, and tomatoes.

Cover and cook on low for 6-8 hours or high for 3-4 hours. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C) in the thickest part.

Once cooked, carefully transfer the chicken to a serving dish and let it rest before carving.

Serving Suggestions:

Garnish the chicken with the cooked lemon slices, rosemary, and tomatoes for a beautiful and aromatic presentation.

Strain the cooking juices and serve them as a flavorful gravy or drizzle over the chicken.

This Slow Cooker Whole Chicken is a recipe that brings the essence of home-cooked comfort to your table, making it a delightful and convenient choice for any occasion.
