Start by preheating your oven to 200 degrees Celsius or 400 degrees Fahrenheit. Spread the bell peppers, zucchini, broccoli, carrots, and red onion evenly across a rimmed 13-inch baking sheet.

Drizzle the olive oil generously over the assorted veggies. Season the mixture with Italian seasoning, pepper, garlic, and salt. Toss everything together to ensure the ingredients are well combined.

Transfer your prepared veggies to the preheated oven and allow them to roast for about 15 minutes.

After this time, pull the sheet from the oven, add the tomatoes, and give everything another good toss to combine.

Return the baking sheet to the oven and continue roasting for an additional 10 minutes.

Once done, remove from the oven and sprinkle the lemon juice over the top of your beautifully roasted veggies.
