Recipe for a fruity, creamy currant cake, definitely try it!!

2. If the dough is too crumbly and falls apart, you can mix a few tablespoons of milk into the dough, but please not too much, as the dough will hold together after kneading for a long time even without milk and it will be crumbly.

3. Now put the dough into a tart or springform pan, bake at 180 degrees C for about 20 – 25 minutes until golden, then remove the cake and let it cool.

4. In the meantime, beat the egg whites into very stiff peaks and then slowly pour in the sugar, and then spread the currants over the cooled shortcrust pastry and add the meringue mixture on top.

5. Next, bake the cake again at 200-225 degrees C for 7 to 10 minutes so that the meringue is baked light brown.

6. Finally, take the cake out of the oven and garnish with a few currants if necessary.
