Ingredients:

1 lb ground chicken

1/2 cup breadcrumbs

1 large egg

1/2 cup freshly grated Parmesan cheese, plus more for garnish

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon onion powder

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

2 cups chicken broth

1 cup heavy cream

1 tablespoon all-purpose flour

Fresh parsley, chopped, for garnish

Directions:

Mix the ground chicken, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, onion powder, salt, and pepper in a large bowl.

Form 1-inch meatballs from the mixture.

Heat olive oil in a skillet and brown the meatballs on all sides.

Remove the meatballs and set them aside. In the same skillet, create a roux with flour and additional oil if needed.

Gradually add chicken broth to the roux, stirring to prevent lumps.

Add the heavy cream and return meatballs to the skillet. Simmer until the sauce thickens and meatballs are cooked through.

Adjust the sauce's thickness and seasoning as needed.

Serve hot, garnished with parsley and extra Parmesan.
