Shred the aged cheddar and smoked Gouda cheeses and mix them together in a big mixing dish.
Put the cream cheese and mayonnaise in the bowl. Toss everything together until it's well mixed. Evenly distribute the chopped roasted red peppers by adding them to the mixture and stirring.
Add the dry mustard and onion powder. A dash of cayenne pepper, if preferred, will provide heat. Combine all the ingredients and stir until combined. (Alternatively, you have the option of using an electric mixer.)

To make the dip milder, just add some dry parsley and stir it in. You are free to skip this step if you so choose.

After the dip is well combined, seal the bowl or place it in a container to keep it from drying out. Put it in the fridge for at least an hour, better all night, so the flavors can combine.
To make sure the dip is properly blended before serving, stir it briefly. Add more chopped roasted red peppers or parsley as a garnish if you want.
Dip the vegetables in pimento cheese and serve with tortilla chips, crackers, or whatever else you choose. Have fun!
